My opponent was able to use Ultra Polymerization to summon Starving Venom Fusion Dragon, then use the grave effect of Ultra Polymerization to summon back the two fusion materials. It has been ruled multiple times in TCG and OCG that this is not possible because the fusion materials listed are 2 dark monsters on the field, and the monsters used for it are in the graveyard.
This is not how its works in the TCG, as the TCG version of the card (the one used in your duel) has different card text than the OCG counterpart.
The main difference is the TCG text simply says to “Special Summon all the Fusion Materials used for its Fusion Summon”, where the OCG says “Special Summon all its LISTED Fusion Materials used for its Fusion Summon”, which is why the OCG does not allow it to be used with SVFD.
